Delicious Chinese Chicken Fried Rice

Chicken Fried Rice (鸡丁炒饭)

The Chinese Cuisine presents a classic and delicious chicken fried rice recipe technique and tutorial. You must try it.

INGREDIENTS:

  • 624 gram cooked white rice.
  • 200 gram mixed veggies: diced carrots, corn, peas and mushrooms.
  • 267 gram chicken breast, diced.
  • 200 gram eggs (we used 3 jumbo eggs, one was double yolk!).
  • 3 gram stalks green onion.
  • 15 gram corn starch.
  • 20 ml oyster sauce.
  • 10 gram salt.
  • 50 ml oil.

DIRECTIONS:

  1. Add a dash of salt, corn starch, and a little bit of egg to the diced chicken and mix evenly.
  2. Add the rest of the egg into cooked rice and mix evenly.
  3. Pour half of the oil into a pan on medium heat.
  4. Stir-fry the chicken and take out once it's cooked.
  5. Pour in the rest of the oil and add in the rice, chopped green onions, mixed veggies, the rest of the salt, cooked chicken, and oyster sauce.
  6. Stir-fry for a 1-2 more minutes
  7. Serve and enjoy!
