Soft and Fluffy Xi Bing (芝麻喜饼)
TCC Presents: These xi bing are soft, fluffy, and have the delicious aroma of sweet coconut milk and sesame seeds.INGREDIENTS
(makes 8 xi bing BUT we only use half of the dough here!):- 700g all-purpose flour
- 80g sugar
- 10g yeast
- 425 ml warm coconut milk (canned)
- 1/2 tbsp. ghee
- 2 eggs
- sesame seeds

DIRECTIONS:
- Combine yeast, 50g sugar, warm coconut milk, ghee, and over half of the whisked egg (save some as egg wash). mix well!
- Gradually add in flour and mix until it forms a ball of dough.
- Let the dough rest until it rises to 2-3x its original size.
- Knead the dough and divide into half. we use half of the dough to make these xi bing; the other half we use to make cream filled bread cones (another video).
- Divide the one half of dough into eight pieces.
- Knead each piece (a lot) so it rises and becomes soft and fluffy.
- Flatten each piece with a roller, cover and rest for 15 minutes.
- Brush with egg wash and sprinkle on roasted sesame seeds.
- Cook on medium heat until golden brown on each side (~3-4 minutes on each side).
- Serve and enjoy!
