Fried Hokkien Noodles Recipe

Fried Hokkien Noodles

Ingredients:

  • 1 kg Hokkien noodles 
  • 300 gram Pork (sliced)
  • 300 gram Pork lard (diced)
  • 500 gram Choy sum
  • 30 gram Garlic (minced) 
  • 3 x Mushrooms (shredded)
  • 300 gram Oil
  • 900 ml Water
  • 1 tablespoon Shao Hsing cooking wine

Seasonings: 

  • 1 teaspoon Chicken stock powder 
  • 1 teaspoon Salt
  • 1 teaspoon Oyster sauce 
  • 1 teaspoon Soy sauce 
  • 1 teaspoon Dark sauce 

Marinade: 

  • ½ teaspoon Salt 
  • ½ teaspoon Chicken stock powder 
  • ½ teaspoon Pepper powder 

The Methods: 

Soak the noodles in water for 30 minutes, wash and drain off excess water. Marinade pork for 30 minutes. Rinse the pork lard and drain off excess water, fried till golden brown and put aside. Stir-fry garlic till fragrant, add in mushrooms, pork, noodles and seasonings. Add water, cover the wok for 20 minutes. Add in choy sum and cook till the water dried. Add Shao Hsing cooking wine stir-fry quickly over high heat, sprinkle crispy pork lard and serve immediately.
